Stanley Recipe File | Anzac Biscuits
1 cup rolled oats
1 cup sugar (I use raw sugar)
1 cup plain flour
1 cup coconut
1 tablespoon golden syrup
2 tablespoons butter
1 teaspoon bicarbonate of soda
Combine dry ingredients.
Melt the butter, water, golden syrup and bicarb soda.
Pour into dry ingredients, mix together and place in small amounts on greased trays leaving plenty of space to spread.
Cook for approximately 15 minutes at 150 degrees Celsius – leave to harden on tray before putting on racks to cool.
There are several slight variations of this biscuit but this particular recipe is tried and true.
A couple of weeks overdue for Anzac Day but never too late to bake a batch of these old favourites.
