Rustic Tomato Relish


2 tbs olive oil

500g brown onions (chopped)

1 green apple (peeled & grated)

1 tbs curry powder

1 tbs powdered mustard

1 tsp mixed spice

1.5kg ripe tomatoes (skins removed & roughly chopped)

3 cups apple cider vinegar

2 cups white sugar

3 tsp salt

1 heaped tbs plain flour.


Heat oil in a large deep saucepan over medium heat. Cook onions and spices for about 10 minutes or until onions are soft. Add tomatoes, apple vinegar, sugar and salt. Stir until sugar dissolves and mixture boils.

Simmer for 1 – 1 ½ hours or until mixture thickens slightly.

Combine flour with 2 tbs of water in a small bowl and add to mixture. Stir until well combined and simmer for another 15 minutes.

Ladle into warm sterilized jars, seal and invert for 2 minutes. Label and date.

Enjoy as an accompaniment to bacon and eggs with rocket leaves or whatever takes your fancy.
