Sticky Plum Chicken
8 chicken drumsticks
½ cup plum sauce
2 tbs soy sauce
1 tbs honey
1 tsp finely grated fresh ginger
2 cloves garlic, crushed
4 spring onions, sliced
1 tbs oil
Fresh herbs or oven roasted long chillies for garnish.
Make a few slits in the drumsticks. Combine sauces and honey, ginger, garlic and spring onion and oil in a bowl.
Add drumsticks, turn to coat in marinade, cover and refrigerate for several hours or overnight.
Place undrained drumsticks in a single layer in a shallow ovenproof dish.
Cook in a hot oven (200C) for about an hour or until well glazed and cooked.
Garnish with herbs or chillies.
